Accelerated oxidation, smooth tannins
We often see baristas shaking the coffee in the sharing pot; this is actually a way to soften tannins and help cool the coffee. The "hill" effect, when shaken, causes the liquid to swirl around the "hill," increasing the surface area for oxidation and accelerating the softening process of the tannins.
Coffee is usually quite hot when it is first extracted, so it is not suitable for drinking. When shaking a sharing pot, people usually put a damp cloth on it to speed up the cooling process. Compared to flat-bottomed sharing pots, the "hill" on the bottom of the pot increases the contact area with the damp cloth, thus accelerating the cooling process.
